That’s why relying on temperature—not appearance—is the safest approach.

Is It Safe to Eat Halfway-Done Ground Beef?

If the beef has not reached an internal temperature of 160°F (71°C), it’s generally not recommended to eat it.

Undercooked ground beef may contain harmful bacteria such as:

  • Escherichia coli (E. coli)
  • Salmonella
  • Campylobacter
