Why You’ll Love This Recipe

  • Only 5 simple ingredients
  • Easy one-pot meal with minimal cleanup
  • Rich, creamy homemade-style gravy
  • Tender, fall-apart beef every time
  • Perfect for meal prep and leftovers
  • Family-friendly comfort food

Ingredients

  • 2½–3 pounds beef chuck, cut into 1½-inch cubes
  • 2 cans (10.5 ounces each) cream of mushroom soup
  • 1 packet (1 ounce) dry onion soup mix
  • 1 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon black pepper (optional)
  • Nonstick cooking spray or 1 tablespoon neutral oil

Directions

Step 1: Prepare the Dutch Oven

Preheat your oven to 325°F (165°C).

Lightly grease the inside of a heavy Dutch oven with cooking spray or a small amount of oil to prevent sticking.

Step 2: Add the Beef

Spread the cubed chuck roast evenly across the bottom of the Dutch oven in a single layer whenever possible. Even spacing allows the meat to cook more uniformly and become exceptionally tender.

Step 3: Mix the Gravy

In a medium bowl, whisk together:

  • Cream of mushroom soup
  • Dry onion soup mix
  • Beef broth
  • Worcestershire sauce
  • Black pepper (if using)

Continue whisking until the mixture is smooth and well combined.

Step 4: Assemble

Pour the gravy mixture evenly over the beef, making sure all the meat is covered.

There’s no need to stir—the slow baking process allows the flavors to blend naturally while keeping the beef incredibly moist.

Step 5: Bake Low and Slow

Cover the Dutch oven tightly with its lid.

Bake for 2½ to 3 hours, or until the beef is fork-tender and the gravy is thick, rich, and bubbling.

Avoid removing the lid during cooking, as trapped steam is what keeps the meat juicy and tender.

Step 6: Stir and Serve

Remove the Dutch oven from the oven and gently stir the beef into the gravy until everything is evenly coated.

Serve immediately over:

  • Creamy mashed potatoes
  • Buttered egg noodles
  • Steamed white rice
  • Homemade biscuits

Garnish with chopped parsley if desired.
