- 1½ cups (180g) graham cracker crumbs
- 5 tablespoons (70g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar

- 4 packages (8 oz each) full-fat cream cheese, softened
- 1¼ cups (250g) granulated sugar
- ¼ cup (60ml) sour cream, room temperature
- 1 tablespoon vanilla extract
- 4 large eggs, room temperature

Instructions
Step 1: Prepare the Pan
Preheat your oven to 325°F (163°C).

Wrap the outside of the pan with two layers of heavy-duty aluminum foil if using a water bath.
Step 2: Make the Crust
